Tuna Bake - Quick and Easy.

This particular tuna bake recipe is served with mashed potatoes instead of the usual pasta options. It is quick and easy to make, and economical.


Ingredients for 2 people:

1 small tin of tuna (drained).
1 tin of condensed chicken or mushroom soup.
1 fresh tomato.
1 cup of frozen peas.
1.5 cups of cheese.
Bag of potatoes (for mashing).

Method:

Peel, wash and chop some potatoes, ready to boil and then mash. You will need a plate full of potatoes for each person, as this is the main ingredient of the dish. Make sure you start cooking the potatoes before you start the actual tuna bake. I normally start on the bake about 15-20 minutes after the potatoes have been boiling.

The tuna bake:

1. Place the frozen peas into a microwaveable casserole dish, and sprinkle with a little water to moisten. Cover the dish with clingfilm and heat on full power for 2 minutes.

2. Layer on top of the peas the tuna and chopped tomato. Then cover completely with the condensed soup. Re-apply the clingfilm and heat on full power for 4 minutes.

3. Finally add the cheese as the top layer. Re-apply the clingfilm and heat on full power for 1 minute.

By now the potatoes should have cooked and be ready for mashing.
Once mashed, add the potatoes to the plates as the bottom layer. Then add the tuna bake on top.

Eat straight away for best results!

Sounds much better than the pasta version but I think I'd prefer to do it in the oven.
