Salmon baked in tin foil (Fish)

I'm a really big fan of salmon so I'm always looking for new ways to cook it. I often fry it in sesame oil and add salt, pepper and chillis but I fancied a change and wanted to do something a little healthier with it. So here is a very healthy and ludicrously simple way to cook salmon:

Preheat your oven to Gas Mark 4
Tear two pieces of foil each to the size of a place mat
Place a salmon fillet on each piece of foil
Season the fillets with salt and pepper
Place a knob of butter on each fillet
Crush two cloves of garlic (I tend to place a big knife flat on the clove then thump it to squash the clove) and place one on each knob of butter
Sprinkle a little rosemary on each fillet or add a sprig of fresh rosemary if you have it
Grate a little lime zest onto each fillet
Wrap each fillet up by bringing the edges of the tin foil and squeezing them together, bringing the ends in so you end up with something that looks like a Cornish pasty
Check that the foil 'pasties' are sealed and place them on a baking tray
Put the baking tray into the oven for 30 minutes
Unwrap and serve with your choice of vegetables and potatoes

See, I told you it was simple. It's also really fun to make and leaves you plenty of time to cook the vegetables, potatoes and whatever else you want to accompany the fish. The fish steams itself in it's little foil enclosure leaving it really moist and tender with a gentle flavour of whatever you put in the parcel with it. It's also really healthy as you don't need to use oil to cook the fish so it doesn't end up greasy. You can put whatever you like in the parcel with the fish so you can really experiment with this recipe. I've yet to try it yet but I imagine this would work well with chicken or turkey as well as fish. The only tip I would give is that you need to make sure you let the excess water run off the fish before you serve, you can just open the foil straight onto a plate as the sauce is far too watery.
