I have just returned from Tuscany and wanted to share with all of you the most amazing recipe I have ever tasted.

MUSSELS WITH MEAT:

You Need,

2kilos of fresh mussels
pound of minced beef
bread crumbs
1 egg
chopped tomatoes
parmesan cheese
basil
Parsley
garlic
2 Tins chopped tomatoes
onion
olive oil
cotton


OK the first thing to do is to clean the mussels and prepare them for cooking.

Mix the mince, bread crumbs, a finely chopped onion, garlic, fresh chopped tomato a little parsley, parmesan cheese (grated) and the egg to bind the mixture together.

Open the mussels using a sharp knife and stuff with the meat mixture. Tie the mussel back together with cotton and put to one side. Continue to fill all the mussels.

Place in a saucepan a little olive oil, garlic, basil, 2 tinned tomatoes and finely chopped onion and place the mussels into the pan. Cook on simmer for about 45 mins stirring occasionaly. Serve whilst hot with past or just fresh bread.

Don't forget to give your guests a bowl of warm water to wash their fingers in as this is a really messy dish.

Ooh, I LOVE mussels and that sounds wonderful! How on earth do you clean and prepare them though? Eek!
