Advantages: easy, quick, yummy, pretty healthy
Disadvantages: salmon can be dear
Simply one of my easiest tastiest dinners, and yes it all starts with the mandatory glass of wine … white this time! So the only bits of pre-preparation are to chill the wine and preheat the oven to gas mark 5 J You will need: · Bottle of nice chilled crisp white wine ~ chardonnay is good · Fresh salmon steaks ~ one per person · Bag of salad ~ the frizzy ones look nice with this · Bag of baby new potatoes ~ Jersey Royals for preference · Crusty crunchy fresh French bread · One lemon per salmon steak · Handful of fresh dill or fennel · Salt and pepper ~ crunchy sea salt works well · Extra virgin olive oil · Butter ~ unsalted · Cooking foil On to the doing bit … · Open the wine, pour a glass, have a swig ~ repeat once at each stage · Put the potatoes on to boil ~ they will take about 10 to 20 minutes depending on their size · Tear off a piece of foil about a foot to eighteen inches square for each salmon steak, turn the sides up a little to prevent spillage · Drip a little olive oil on to it and place a slice of butter on the foil · Plonk the salmon steak on top · Repeat the oil and butter process · Squeeze a the juice of a whole lemon over each parcel ~ this is when you realise you should have lifted the foil sides higher · Drizzle a little wine over the stack · Lay the fennel or dill on top · Season with a little salt and pepper · Lift the sides of the foil up and gently scrunch together so you have a high parcel that is not airtight · Pop into the oven on a baking tray (in case of leaks!) at about gas mark five for about fifteen minutes · Open the bag of salad and shake into a bowl · Slice the bread and serve with the remaining unsalted butter · You have been remembering to drink the wine haven’
t you? When the pinger goes all you have to do is serve and eat. This actually tastes very healthy and if you cut down or out the butter it would actually be healthy!

- 17/04/02 This is a cooking method that works well with almost all fish. It is, as you say, quite healthy but more important is the fact it keeps all the flavours in.
