On of our annual Easter breaks to Scotland we were very privaliged to have a lovely dish of Pheasant in Mushroom Sauce.

My wife is an avid cook and we got the recipe from the hotel owner. We then decided to experiment a bit with the sauce, which constitutes the main basis for this dish.

Ala Pheasant with Mustard Sauce

The ingredients
---------------

4 Pheasant breasts
2 tbsp cider vinegar
3 tbsp whipped cream
3 tbsp mustard
90g butter

Preparing it
------------

Paste the butter all over the pheasant breasts and then wrap in aluminium foil.
Place in the oven at 400F for 20 minutes.

Whilst the pheasant is in the oven, melt the remaining butter in a bowl placed over simmering water. Use a metal pot. Then add the mustard and vinegar.

Cook for 8 minutes before adding the cream and seasoning.
Pour this sauce over the pheasant breast.

Serve with Roast potatoes and peas or carrots.

The above will serve 4 persons.

We understand from friends that there is a similar recipe to this for "Pheasant in Mustard Cream".

I've got some pheasant in the freezer so may try this.

Sounds good. Haven't had pheasant for ages, the local shoot used to give us a brace every now and again when I lived on the farm, only bad point being I usually got a piece of lead shot in my serving.
