It's been a while since I wrote a review, so I thought I'd share with you the simple Chile which I knocked together last night. I'd got pork mince out of the freezer and arrived home to find hubby was going to be late, so I had to decide what to make, and this is what I came up with!


Serves 2:

---Ingredients---

130g brown rice (nice and healthy) - of course you can use whatever you want, or so it with a jacket potato if you prefer!
250g pork mince (nice and lean)
1 onion
Tin of kidney beans (in chili sauce if possible)
Tin of Tomatoes
Chilli spice
Medium Curry Powder
Garam Masala
Paprika
All Spice
Coriander
Salt & Pepper
Olive oil


---How to make---

Boil some water in a pan on the hob, and cook the brown rice according to the instructions on the packet - brown rice seems to take a lot longer than white rice (25 minutes once boiling).

Meanwhile heat the olive oil in a frying pan on another hob, chop the onion, and put in the frying pan along with the pork mince. Cook until the mince is cooked and the onion is starting to soften.

Add the tomatoes and the kidney beans (if it's kidney beans on their own then you'll need to drain them) - we happened to have kidney beans in chilli sauce. Add a tinful of water if it doesn't look wet enough.

Add all the spices - to taste really. Keep tasting as you go along. I would say I probably put in between half and one teaspoon of each spice. Basically you can make it as spicy/hot as you like! We have a big spice rack (I love herbs and spices) so it was fun choosing what to put in. You don't need all the spices, but Chilli, Paprika and Garam Masala are the most important - IMHO!

Obviously add salt and pepper to taste - I like lots of pepper!

Bring up to simmering point and simmer (stirring occasionally) until the rice is cooked.

Serve - yum yum!!! Hubby was pretty impressed - normally I need to cook things using recipes.

Summary: A nice quick evening meal.
