Advantages: Warms You Through & Through
Disadvantages: Wind!!
This is a similar recipe to the review from nicki--martin "A Great Winter Warmer Soup"
However mine differs slightly by adding Tomato Soup!! Or if you want an healthy choice which is free on slimming world and weight watchers add Passatta which is sivied tomatoes and is a great alternatively to soup ( if you want it to be greamy add good for you or light choices cream of tomato soup for an healthier choice)
Ingrediants:
1lb of any veg you like (my favourite is butternut squash, sweet potato, potatoes, courgettes, broccolli, cauliflower, leeks, onions, musrooms, sweede, carrotts, cabbage, aubergines)
1 Pint of Vegetable Stock
1 500g Jar of Passatta (or 1 tin of tomato soup if you prefer it creamy and thicker)
1 Garlic Clove
1 Chopped Onion
Mixed Herbs
Salt & Ground Black Pepper
Extra Virgin Olive Oil
Method:
Peel and roughly chop the veg (if you do not want a chunky soup\stew that chop your veg into smaller chunks so it's easier to blend).
Fry the clove and chopped onion in a hot pan with the olive oil. Next add the veg and sweat for 1 min with the pan lid on.
Add the vegetable stock and stir in the passatta or soup and season to taste with the herbs, salt and pepper. I always like to add a pinch of curry powder to give it a bit more umph!
Bring to the boil and simmer for around an hour - or longer. This is great done in the slow cooker cos the veg just falls off your spoon.
If you want to maske this as a stew then add chunks of chicken or mince (i always pre cook my meat before adding to remove any excess fat)
Then serve - i love this and when i make it i serve in a small bowl and love going back for more as it's so moorish!!
If your not on a diet i thoroughly recommend add a tin of heinz tomato soup - may sound werid i know but trust me you will be pleasently susprised!!
