This is a fabulously quick and easy low fat recipe that you can serve to anyone, whether they are watching their weight or not. It is from the Weightwatchers Pure Points 2 recipe book, which is several years old, but which provides some excellent recipes even though I don't follow the Weightwatchers programme!

Serves 4
Preparation and cooking time - 15 minutes
Calories per serving - 80

**ingredients**

low fat cooking spray (or I use a bit of olive oil)
1 teaspoon sesame oil
1 inch piece of fresh root ginger, grated finely
2 garlic cloves, cut into thin slivers
2 tablespoons light soy sauce
juice of 2 limes
9oz (250g) peeled raw prawns (tiger or king if possible)
small bunch of fresh coriander - chopped

**method**

1. Heat a wok or large frying pan and spray with the low fat spray, or add olive oil. Add the sesame oil and heat until hot, then add the ginger and garlic and stir fry for 1 minute.

2. Add the lime joice, soy and the prawns and stir-fry for 3-4 minutes more until the prawns are pink.

3. Sprinkle with fresh corinader and serve.

This is really nice served with fresh egg noodles, which also only take a few minutes to cook, and steamed broccoli. Alternatively, a rocket salad is delish alongside it and really compliments the flavours in the prawn dish.

This dish could be accommodated as a starter or as a main course and works well every time! The whole thing is ready to eat quicker than you could order a Chinese Takeaway, and cheaper too!

King prawns are often on offer in the frozen section at the supermarket but please make sure they are defrosted thoroughly before using them in this recipe.

For those who follow weightwatchers, this recipe has a total of 4.5 points, or 1 point per portion (excellent!) and if you have noodles alongside, add on 3 or 4 points for those too per person - enabling you to eat a yummy dessert guilt free!
