Advantages: Very healthy but with lots of taste!

This is a recipe for a delicious and very satisfying soup. I often find soup recipes can be a little bit bland, but this is lovely and tasty. The apple adds a wonderful sweetness.
Don't be put off if you don't like curry, my boyfriend doesn't, but he does love this soup!
Serves 4
You will need:
1 tablespoon of olive oil
1 onion
1 teaspoon of mild curry powder
2 eating apples
1 buttnernut squash
1 litre of vegetable stock
salt and pepper.
Firstly you will need to chop or slice your onion. Heat the oil in a large pan, add the onion and cook until it is soft and golden.
While the onion is cooking, core, peel and chop your apple into cubes (no smaller than 1cm cubes). When the onion is ready, add the apple and the curry powder and cook for another two minutes, stirring so that the curry powder coats the mixture.
Peel, de-seed and chop the squash into cubes. Add this to the pan, with the stock. Bring it all to the boil, then turn down to simmer for between fifteen and twenty minutes, or until the squash is tender.
Remove from the heat and tansfer to a blender - be careful as it will be very hot. Blend until smooth. It is too thick you can always add a little boiling water to thin it out.
Return to the pan and heat through, adding the salt and pepper to taste.
Enjoy!
Serve with crusty bread and butter if you are allowed to (remember this is supposed to be healthy) or enjoy on it's own, it is very filling.
I don't know the exact calorie content, but if you were doing Weightwatchers (like me!) I have worked it out to be about 1 point per serving, which makes it down-right heavenly!
There are only two in our house and you could halve the recipe if you like. We always make enough for four as it keeps well for a few days in the fridge (heat on the stove or microwave) and would freeze well too!
Please try this, not only is it healthy, but would impress guests too!
