Advantages: Easy to make, Delicious and Versatile
Disadvantages: No disadvantage to healthy food
Cous Cous with Apricot and Raisins is probably one of my favourite summer recipes, its not particularly authentic but it is loosely based on Morrocan flavours. It is simple to make, very healthy and keeps well in the fridge for 3-4 days.
Please keep in mind the Ingredients I list below, are approximate quantities, you can adjust them accordingly to suit your own taste.
INGREDIENTS
300g dry uncooked weight of Cous Cous
1 small packet of Dried Apricots coarsely chopped (approx 30-40g)
1 small packet of Raisins coarsely chopped (approx 30-40g)
3-4 Tablespoons of Olive Oil
Salt and Pepper to taste
150g of ChickPeas (approx 1/2 a 400g tini)
10g Lemon Rind or finely chopped Marinated Lemons (if you have them)
50ml Lime Juice (or lemon juice can be used as an alternative)
5-6 Fresh Mint Leaves finely chopped.
METHOD
-Really this could not be easier, you basically prepare the Cous Cous per the packets instructions. Which normally will involve pouring boiling water over the Cous Cous (in a suitable bowl), covering and leaving for about 4-5 minutes to swell. In the meantime occasionally stir and adjust liquidity until its dry and fluffy, but not sticky, and certainly not wet!!
-Next you add all of the ingredients and combine thoroughly so it is all mixed through nicely. Season to taste.
-Next you cover the dish, and place the whole thing in the fridge and leave it for at least 4 hours, to allow the flavours to infuse together. Overnight is even better, next day is superb.
-To serve remove the quantity you need, allow to come to room temperature and enjoy!
This is perfect served as an accompanient to Barbecued meats, or with some Fresh Kebabs, or Spicy Chicken Wings.
For the Vegetarians amongst us, it is worth mentioning that this salad is also perfect for use as a stuffing. For example inside Red Peppers or even large Beef Tomatoes and then baked in the oven for twenty minutes. Delicious!!!
Summary: A Delicious Middle Eastern Inspired Salad, Easy to Prepare and Economical!
