Advantages: Cheap, tasty, healthy.

Disadvantages: Isn't very filling.

Cauliflower Cheese - another healthy and economical meal for two.

Ingredients:

1 Cauliflower (small to medium sized).
1 tin condensed chicken soup.
2 cups grated cheese.
2 slices of bread - rip apart into small pieces.


Method:

1. Wash the cauliflower and cut into florets. Place the florets into a large pan and cook for approx 25 minutes (until tender - don't over cook as will end up too soggy).

2. Place the tin of condensed soup into a seperate pan. With the empty soup tin, fill it half full with water and add this to the soup. Give it a good stir. Heat until very warm/hot. Don't do this though until the cauliflower is almost cooked.

3. Once cooked, remove the caulilower from the hob and drain. Then place the florets into a casserole dish.

4. Once the soup is warmed, pour it over the cauliflower florets (making sure to cover all of them).

5. Sprinkle the grated cheese on top of the mixture, followed by the bread pieces on top of that.

6. Place the dish under a light to moderate grill for a few minutes ( until the bread pieces have browned ).

Best served straight away, with your choice of potato and vegetables.

Summary: Lovely alternative to meat dish.

Florets is slightly quicker - I cook the cauliflower whole. The chicken soup is an interesting twist.
