Here is a recipe for a delicious bowl of Roast Garlic and Tomato Soup. Full of antioxidants, which has its own benefits, and also makes a delicious soup to ease the symptoms of a cold.

Ingredients:

Garlic (1 bulb)
Tomato (3 medium)
Olive Oil (2 tbsp)
Cayenne Pepper (1/4 tsp)
Paprika (1 tsp)
Coriander (2 tsp ground)
Dried Thyme (1/2 tsp)
Chicken/Vegetable Stock (2 cups)
Parmesan Cheese (3 tbsp grated)
Butter (1/2 tbsp)
Onion (1 medium chopped)
Salt
Pepper

Method:

1.. Preheat oven to 400 F.

2.. Slice off the top of the garlic bulb revealing the cloves.

3.. Cut the tomatoes into halves.

4.. Place tomato halves and the garlic into an oven proof pan or dish and drizzle them with the olive oil. Sprinkle salt and pepper to taste and roast in the oven for about 50 minutes or until the garlic has browned and the tomatoes have softened.

5.. Remove from the oven and squeeze out the softened garlic and remove skins from the tomatoes.

6.. Sauté the chopped onions in a pan with some oil for about 3 minutes, or until they are soft, and then add the 2 cups of vegetable or chicken stock to the pan and bring to the boil.

7.. Add the garlic, paprika, coriander, thyme, cayenne pepper, tomatoes and butter. Simmer for 3-4 minutes on a medium heat and stir occasionally, adding some more salt and pepper if needed.

8.. Leave it to cool down and then purée in a blender.

9.. Pour into soup bowls and sprinkle on the Parmesan cheese.

Eat with some thick, crusty bread and feel the whole soup warming you up on those cold, dark winter evenings!

Summary: A delicious and healthy soup.

Sounds good and very flavorful! I am glad you did not add meat to this recipe because I am a vegetarian and a lot of times they have meatless titles, but then add meat in the recipe!
