Today I thought I would share with you a delicious and very naughty Honey Cake, I have just made three for my brother and two daughters and because I am a good Weight Watcher I didnt have so much as a mouthful for myself!
Honey Cake
85g Caster Sugar
85g Unsalted Butter
115g Runny Honey
225g Plain Flour
2 Eggs
1 tsp Baking Powder
Firstly you need to lightly whisk your eggs.
Then pre heat your oven to Gas Mark 4, which is equal to approximately 180 degrees C.
Grease a 20cm cake tin and line with one layer of baking parchment.
Cream the butter and caster sugar together until the mixture is light and fluffy.
Add the beaten eggs gradually, and then follow this with your runny honey. Sift the flour and baking powder and then fold this gently into the mixture.
Pour the mixture into your cake tin and use a spatula to level the top. Bake in the oven for 30 minutes until the cake is golden brown and has started to shrink away from the sides of the tin slightly.
Allow the cake to cool on a wire rack and eat as soon as possible for the best possible honey flavour.
If you are feeling particularly indulgent you can make a quantity of the Honey Sauce below and drizzle it over the cake prior to serving, although this cake is equally good without the sauce and simply buttered.
Honey Sauce
In a double saucepan (or a bowl perched over a pan of boiling water) heat together 225g of runny honey and 300ml of water. Blend this thoroughly and add the grated rind and juice of half a lemon and half a sweet orange, 2 teaspoons of unsalted butter and a very well beaten egg.
Stirring constantly, allow this mixture to sit over hot water for at least 10 minutes until it has gotten slightly thicker.
Remove from the heat and pour over your Honey Cake, or anything which needs sweetening up!
Summary: A delicious home made cake which can easily be made cheaper than buying a shop made cake.
