Seeing as I'm a lancashire lass I thought it might be nice to let you have a lovely family recipe, which not only was passed down to me by my aunt but has been served in our family for years. I have taught friends and neighbours this simple and easy to follow recipe and now it's your turn.

All you need is a nice large oven dish, to put it all in and to pre-heat the oven at gas 4 /electric 275 while you get the ingredients ready.
These are:-

Ingredients: (Serves 4)
1 kg shin of lamb (Cut into 3-4cm thick pieces) or six good sized chops, depending on your taste.
700 g Thinly sliced onions
1 kg Peeled potatoes
40 g Butter or marg
150 ml water
1 oxo cube or bisto granules
3 tsp Sea Salt
White pepper

Season the lamb and place in the bottom of the oven dish.
Then gently fry the onions in the butter for a few minutes, 3-4 and add these to the dish topping the lamb at the bottom.
Slice the potatoes about 2mm thick and spread these over the onions so that they layer up to the top of the dish.
Mix the gravy in with the water and pour over the ingredients in the oven dish.
Place the dish with a lid on and gently cook for about an hour and a half, adding more water if needed.
Thicken the gravy to your desired taste and serve.

This is an easy dish to make and can be thrown together quickly if you have the ingredients, you can add sliced carrots as well if you like and serve the whole thing with green beans, cabbage, or make a separate crust.
I love this dish as it gives me the freedom to do other things whilst it cooks.
I don't have to be stood over a boiling pan in the kitchen, it can be put in and the rest of the housework can be done whilst it's cooking.
The kids love it and it serves a family of four cheaply.

Sounds like a nice recipe. I don't eat lamb though, but no doubt I could choose what meat I want in it! Louise. x
