I like to be creqtive when it comes to food and the following recipe is, as far as I know, unique to myself.

I buy either a half leg or full leg of lamb and marinade it overnight with spices, plenty of onions, honey, fresh lemon juice and coriander. I normally cover the lamb in onions and squeeze 3-4 lemons at least. Honey I dilute in white wine, nromally 2-3 large spoons of honey in 250 mil of wine.

I then cook for anything between 100 and 120 minutes the lamb with potatoes, while the onions I fry apart in olive oil. With onions I just want them to be very very gently brown and I add the marinade juice to prevent them from being fried.

During the season of apricots, I like to cut fresh apricots together with the onions, otherwise I also tried with pineapple once. I once experimented with double cream, but I think that wine and double cream do not go well together.

You can serve with rice, but I have never done it myself, because I prefer to eat with bread, or, if I manage a spare tray of potatoes, with potatoes. I forgot to say that potatoes tend to be ready after one hour, normally I either add them to the lamb adter 40 min or take them out of the tray when they are ready.

This dish does well with a red wine and is more indicated for winter than summer.
