This is a lovely meal best served with rice or a green salad however it also goes well with roasted or new potatoes.
Ingredients
4 lamb chump chops
half bunch of mint finely chopped
half bunch of parsley also chopped
125ml groundnut oil
1 tsp olive oil
half chopped onion
175g of basmati rice
1 tsp of tumeric
salt and pepper
15g of butter
Preperation
Heat the oven to 200C / Gas Mark 6.
Place the lamb chops in a shallow dish and then put the mint and parsley in a food processor and blend gradually adding the groundnut oil during the blending. Pur over the lamb and leave to marinate for about 5 minutes.
Heat the oilve oil in a casserole dish and add the onion cooking over a low heat until the onion begins to soften. Add the rice and about 1.5 times its volume of water and bringto the boil. Then add the tumeric and covr with grease proof paper and bake in the oven until the rice is tender. This usually takes about 15 minutes dependant on you oven. Add the salt and pepper dependant on your own tastes and stir in the butter.
Grill the lamb for about 3 minutes on each side so that it is still pink in the middle. Brush it with the mint oil and leave it to rest for about 10 minutes before serving with the rice.
I find this makes a nice change and can also be cooked on the BBQ when the weather gets better.
