Advantages: simple to make and filling

stuffed mozerella and peperioni chicken breast

serves four

4 skinless chicken breasts
ball of mozerella {drained}
2-3 slices of peperoni per chicken breast
salt and black pepper

wooden coctail sticks
oven proof dish

make a pocket in the chicken breasts

quarter drained mozerella and put into the pocket you have made in chicken.

also stuff the chicken with the pepperoni slices, you can get this from deli's or most supermarkets, if you cannot get pepperoni use salami or for a spicer taste use chrizo sausage.

use the coctail sticks to close the gap in the pocket so the filling does not leak out when the cheese melts

season the chicken with salt and pepper, add extra spice by adding a little cajan seasoning

put into a preheated oven in a oven proof dish for 25-30 mins.

serve with homemade potatoe wedges {i season mine with cajan seasoning} and a green salad or with my easy garlic and onion passata sause which i'll give you the recipe below.

garlic and onion passata

half a carton or bottle of ready made passata {sived tomatoes}
2 fat minced garlic cloves
1/4 of a extra finely chopped red onion
oil

in a frying pan heat a little oil
add the red onion and cook till it is lightly brown
add the garlic, cook just enough to take the rawness out, do not over cook, a good way to tell is when you can really smell the garlic aroma.
add the passata and reduce the sause until 3/4, and serve buy pouring a little over the chicken breasts, its also a great pasta sause
