Advantages: Simple, cheap and dead easy to do
Disadvantages: Grating the potato can be a faff!
I have been trying to go "back to basics" for a few years now, using fewer ingredients, keeping my shopping budget low, and trying to teach my very sporty teenagers how to cook good food on a budget, to ensure that they eat reasonably healthily, and will not be restricted to a repetoire of beans on toast or pot noodle when they are away from home!
One of my current favourite cook books is "The Ration Diet Book" which, as you would expect, uses the basic principles of eating whilst on wartime rations, yet giving the recipes an update for the 21st Century where appropriate - now this might sound a bit bleak but actually I think that in many cases people ate a lot healthier then than they do now - certainly if you are looking for back to basics food on a budget, the wartime housewives can show us how to do it and we can learn a thing to two!
Anyway......one of our favourite recipes is a variation of Corned Beef Hash - and is simple, cheap, quick and filling.......
**Corned Beef and Chilli Rosti**
Ingredients
225g (8oz) Corned Beef
3 Medium King Edward potatoes
1 onion, finely sliced
3 tbsp sweet chilli sauce
1 tbsp olive oil
salt & pepper to taste
Method
1. Peel, par-boil and grate the potatoes
2. Mash the corned beef and mix with the potato
3. Add the onion and the sweet chilli sauce. Season to taste
4. Heat the olive oil in a baking tray or pan and add the conred beef mixture - dividing into 4 patties and flattening with the back of a spoon.
5. Bake at 180 degrees C for 25-30 minutes or until crisp and if you want to brown the tops, grill for 1-2 minutes.
You can serve this in a variety of ways - with baked potatoes and baked beans in the winter, with a fried egg on top, or with a green salad - they really are delicious and so simple!
You can fry these as well, but I like the fact that I can pop them in the oven and let them do their own thing for 25 mins without worrying about them!

I know that corned beef may not be everyone's favourite, but I would certainly recommend giving these rosti a try.
