Speedy goulash if you're in a dash! (Meat)

Goulash was originally a hungarian dish, served as a soup. It has been adapted many times, mine being one of those times.

I first tried goulash whilst stopping at a hotel one Sunday afternoon desperately hungry and willing to eat just about anything. Not expecting much, I was nicely surprised by the taste and decided to replicate it myself.

After experimenting with different recipes, I finally made a goulash that I liked, that wasn't difficult, too time consuming or cost the earth.

Ingredients (for 4 people)

300g stir fry beef strips ( I used frying steak)
100g mushrooms sliced
600ml beef stock (i used a cube)
3 large carrots chopped into chunks
3 tsp paprika
500g potatoes, peeled and diced
500g tin chopped tomatoes and garlic
Handful of parsley

How to make:
1. Fry the beef in a pan for approx 5 minutes until browning. Once browned tip the beef onto a plate and sert aside.
2. Fry the mushrooms for 2/3 minutes until starting to soften and turn colour.
3. Sprinkle 2 tsp of paprika over the mushrooms and stir.
4.Tip in the chunkc of potato, carrots, beef stock and can of tomatoes and garlic. Stir and let simmer for 20mins until potatoes and carrots are tender.
5.Return the beef strips to the pan along with the juices and heat through.
6. Stir in the parsley and serve with crusty bread.

Really delicious and best of all, it fills you up so you aren't snacking all night. A perfect winter warmer!

Thankyou very much for this! I love goulash, but have never attempted to make it myself. Am about to go the supermarket in a bit, so will pick up the ingredients. Very useful!
