This is a recipe that has been in our family for years. It may sound like an interesting combination but I can assure you that it works incredibly well and that everyone I have made it for has asked for the recipe. This will feed approx 4 people.

Ingredients:

4 Chicken Breasts
Salt & Pepper
2 Large branches of broccoli
1 Tin of condensed mushroom soup
250ml Double cream
4 tablespoons of Curry powder
White breadcrumbs
Cheese

I usually buy a ready roasted chicken and use all the meat from it. Alternatively get 4 chicken breasts, brown off and cook in oven for 20 minutes then slice into decent chunks. Lay the chicken into a baking dish and allow to cool.
Cut your broccoli into florets and drop into boiling water. Boil for approx 5 minutes (until al dente). Drain and cool. Place broccoli over the chicken.
In the meantime add your soup and cream into a bowl and whisk to combine. Season and then whisk in the curry powder.
Pour this liquid over the broccoli. Cover with breadcrumbs and cheese. I suggest you make your own breadcrumbs - just leave some white bread out for a few hours until it starts to go stale and then chop in blender. Place in oven at 200 degrees for approx 25 mins or until cheese goes nice and golden. Suggest serving with new potatoes
