Chicken wrapped in bacon, served with roasted vegetables (Meat)

Delicious Italian inspired dish.

Serves 2

Ingredients
2 Skinless chicken breasts
4 slices of bacon, preferably streaky but back will do
2tbs tomato puree
1tsp garlic paste
Italian Seasoning

1 courgette
2 small red onions
1 small red pepper
1 small green pepper
Pack of cherry tomatoes
Handful of mushrooms
6 Garlic cloves
3Tbs Olive oil
Rosemary


To Serve
2 pitta breads
Mixed salad leaves
Fresh basil

Method

1. Prepare the chicken by slicing each breast in half, removing and fat.
2. Mix together the tomato puree, garlic paste and a little Italian seasoning and spread equally over the 4 chicken pieces
3. Wrap each piece of chicken in a slice of bacon and place on a greased backing tray, cook in oven gas mark 6 for 25 minutes
4. Pour the olive oil into a large mixing bowl, adding the rosemary and peeled garlic cloves.
5. Wash the vegetables and chop into rough chunks, place in the mixing bowl with the oil, mix well and leave to marinate for 15 to 20 minutes.
6. Roast vegetables in oven for 30 - 45 minutes at gas mark .
7. Serve topped with ripped fresh basil, toasted pitta breads and salad

Variations on this dish - you could add a slice of mozzarella before wrapping the chicken breast in bacon, another thing that works well is mixing a little chilli paste into the tomato puree. To spice up the vegetables add a finely chopped fresh chilli to the marinade (remember to wear gloves when chopping the chilli!)
