On Sunday mornings it’s nice to get away from tasteless cereal and a snatched coffee.

Coming from the West of Scotland I still hanker for a traditional cooked breakfast.
Even living in England I can still get all the essential ingredients, including potato scones and black pudding, except one sliced sausage. I have always loved sliced (or Lorne) sausage and ‘bangers’ just don’t fit the bill.

I searched everywhere local with no joy, and before you ask I live miles away from Corby! There are butchers in Scotland who will send down a van full of meat but it’s a bit of overkill when all I want is a couple of sausages.

Therefore I had to resort to extreme measures and find out how to make them from scratch. I owe this recipe to my friend Gillian who came up trumps. Other friends who cook killer curries using rare spices only available on the black market replied ‘ don’t they make them at the butchers’. What from the mythical Lorne beast?

Anyway here goes.

You’ll need:
2 lbs Minced Beef
2 lbs Ground Pork
3 Cups Fine Bread Crumbs
2 tsp Nutmeg
2 tsp Pepper
3 tsp Coriander
3 tsp Salt
Cup of water.

Then:
Mix really well by hand then place in an oblong pan (casserole dish will do). You might need two pans. Place in the freezer for a little while till it's just starting to set. Remove and cut them to the thickness you like then put into freezer bags and return to the freezer.

When required, defrost and fry in a little fat or oil until brown and cooked through. (For traditionalists fry in half pound of pig’s lard but forget your 60th birthday.)

Never tried sliced sausage - might have to give it a go. :-)

One of my friends loves square sausage - if thats anything like it I think you can get it in Tesco & Iceland.
