Yes I know it sounds weird, but pork is one of those meats that has its own flavour and is very hard to do anything with that is original and doesn't require apple or sweet and sour sauce. The good thing about this recipe is its simple and it really is up to you what you add to it, I am only giving you the beginnings, do with it as you wish, but I can guarantee the basic taste is great. So here goes.

Preferably buy some decent pork fillet, but any pork will do if you are prepared to spend the time getting rid of the fat - this is important as it is the fat that makes pork difficult to enhance the flavour of. You can either leave it in steak like form or chop it into cubes(preferable as the flavour will marinade the meat better).

The following will be enough for two people, so double the quantity for four etc.

Chop an onion -smallish pieces
Skin 2 peaches and one mango (this is the bit that takes the time)-slice and dice them -discard the stones. Salt to taste.

Chuck everything into a frying pan -meat, onion,peaches and mango. Cook over a low heat until meat is ready to eat (falls apart!). You may need to add water depending on how juicy the mango and peaches are. I would suggest you squish the fruit with a wooden spoon so as to get more juice in the gravy rather than lumpy bits of fruit, but that's up to you.

That's it - simple but delicious - the gravy comes from the fruit and it gives the pork a succulent fruity taste. You can alter the basic recipe by adding such things as a tin of tomatoes, or paprika (gives it a goulash type flavour), garlic whatever within reason and more importantly you can serve it with whatever you wish - I would suggest rice or potatoes with carrots - especially if the carrots have had some honey run over them and sesame seeds added!
