No matter what else is on our shopping list there will always be potatoes. There is such a huge idea bank when it comes to making dinner with them. As we are in the credit crunch I thought I would put a few of my favorites up here after all potatoes are relatively cheep. One great thing about potatoes is that they can be boiled, baked or fried.

One of my all time favorites which is very quick and easy is stuffed baked potatoes. Everyone has their own favorite toppings. The way I make mine is to put the potato in the microwave for 4-5 minutes and turn the oven to 100 degrees at the same time. When the microwave bit has finished put the potato in tin foil with some olive oil, salt & pepper and then place in the oven for roughly 20 minutes. Whilst the potato is crisping in the oven chop up some feta cheese and spring onions. Obviously check that the potato is cooked and then place in a bowl, add some butter, add the feta and onions and then top off with a vinaigrette salad dressing. Not everyone's taste but I love it.

Sweet potatoes come in handy as well. For the little ones I have always popped one in the microwave until cooked and then there you go. Once it's cooked it's an instant baby food with tons of goodness. Easy for them to eat when weaning too.

Try making chips with sweet potatoes as for some reason they always get a bit crispier than normal potatoes. Gives a normal roast chicken dinner a bit of an edge too. Something different.

Making a curry or vegetable soup can always be a good idea if you're running low on meal ideas. You can use whatever is left in the kitchen.

Other meal ideas include pies, soups, stews, casseroles and quite a number of vegetarian dishes.

At Sainsburys a 4 pack of baking potatoes costs 55p (Sainsburys basics). A 2.5kg bag of loose baking potatoes is priced at £2.27. A 1kg bag of loose sweet potatoes goes for £1.68.
