Advantages: Great Tastes.
Disadvantages: Funny Mixture.
Ok now first thing to tell you is no I have not deterred from my vegetarianism but I do feel I have to share a few meat recipes with you because they are that gorgeous. My first one is a chicken and banana curry which to be honest does sound very strange but believe me it tastes very good indeed and is quite a mild curry so everybody should be able to take it as there are hardly any spices.
The ingredients:
* Sunflower oil.
* Chicken Breast.
* Red Onion.
* 2 tablespoons of curry paste.
* ½ teaspoon of paprika.
* ½ pint of cjicken stock.
* 8 oz of canned chopped tomatoes.
* Red pepper.
* Baby sweet corn.
* 6 oz new potatoes.
* 2 teaspoon of cornflower.
* ½ pint single cream
* 1 banana.
* Naan bread.
I know you are thinking that this cannot be the healthiest meal on the planet but then again you do need to treat yourselves sometimes. This meal is really easy to make so here it goes;
* Put a thin layer of oil in a big sauce pan and heat.
* Chop the chicken breast into as small pieces as you fancy and then add to the pan and fry until cooked lightly.
* Remove the chicken and place on a separate plate.
* Chop up the onion and fry until the onion goes nice and soft.
* Stir in with the onion the curry paste and the paprika and cook for a couple of minutes.
* Get the chicken stock and chopped tomatoes and add to the pan and then make sure it begins to boil.
* Lower the heat until it is simmering and then add the chicken and chopped pepper, baby sweet corn and new potatoes (which can be chopped if you prefer).
* Cover the pan and leave it to simmer for about twenty five minutes. You will know when it has been enough as the potatoes will be nice and tender.
* Mix the cornflower and cream together and add to the pan.
* Slice the banana and add this too, then simmer for another twenty five minutes.
* About five minutes before the curry is cooked, make sure that you take the naan bread and cook according to the packet which is usually in the microwave for a minute or under the grill for a few minutes.
* Serve.
For this meal you can also cook some rice to go with it but we usually find that with the meat and potatoes and the naan bread that rice is a bit too much. The actual food does look just like a curry and is a light brown colour. You will see that the banana slices have gone a bit mushy but it all just adds to the flavour. You do need to serve warm naan bread with this meal though as there is so much sauce that you need something to mop it up with. Me and my family have about two pieces each when we have this meal so do bear that in mind.
What I would say about the taste of this curry is that it is very different and despite what you may think is actually not too sweet. The banana is not a great big factor in the meal but the taste of the banana compliments the sauce and the potatoes. For people who are not a big fan of curry, they may still enjoy this as although there is a slight curry taste, it is not so overwhelming that you can’t get the curry taste out of your mouth. Instead it is a very mild dish that tastes absolutely delicious.
The good thing about this dish is that you can get rid of some of the ingredients if you are not a big fan, such as my sister is not a big fan of onions so my mom always does a portion for her without them. This meal though is very textured and you can really taste the vegetables and the potatoes well. The chicken surprisingly has not got a strong taste in this meal as the sauce is that tasty and strong with flavours.
The final thing I will tell you about this meal is that it is very filling. When we have it, the whole family always enjoys it so much that they want seconds but not many can manage it.
I am not sure where my mom first got this recipe from but it is a family favourite of ours ever since she first made it. Now although I am a vegetarian the next time she makes this I will just have a portion without the meat as the meal is tasty and substantial enough without it. It is easy to make and great to make if you have a lot of people to feed but do beware of the long cooking times as it is not the kind of meal you can whip together in ten minutes as it does take a little bit of looking after.
Please do not get immediately turned off trying this meal because of the banana / chicken combination but instead give it a go and enjoy.
