Intro

I seem to be writing a lot of recipies on this website, not that I cook that often, I just have a core of 5 or 6 dishes that I feel I cook pretty well.
My favourite is a dish I call "Stig Chicken" Stig being a nickname I've had for years,due to my hair at university, basically a huge curly mop.
Anyway back to the dish in hand.
This is a very simple dish takes about 5 minutes to prepare, half an hour to cook and tastes sublime.
What do I need?

1 Chicken breast per person
Fresh Chives
Fresh Basil
Olive Oil
Brie (Though any cheese will do)
1 rasher of bacon per person
What do I do?

Get your chicken breast and slice through the centre as if your cutting in to a roll so not all the way through, Chop your herbs up finely, sprinkle inside the chicken, get a slice of brie place on top of the herbs, drizzle a bit of olive oil onto the brie.
Close up the breast and wrap the bacon around the chicken breast.
Now on to the magic part, get a sheet of tin foil, drizzle olive oil on to that, place the chicken on the tin foil and wrap up, heat the oven to gas mark 5 and cook for 30 minutes, once cooked take the chicken from the tin foil and put on to your plate.
Serve with pasta or rice and pour the juice left in the foil on to the rice or pasta and eat.
And that is it a very simple dish that tastes great.
