Advantages: even with the cream its healthy and full of vegetables

Disadvantages: time consuming

chunky chicken, leek and wild mushroom stew

serves 6

3 chicken breasts
3 leeks
500g of wild mushrooms
6 slices bacon
2 potatoes
oil
salt
pepper
1 pint chicken stock
handful of parsley
100 mls single cream

cut chicken into bite size chunks
chop bacon into small strips
cut potatoes into bite size chucks
unless mushrooms are large there is no need to cut.
finely slice leeks

in a large pan heat a little oil
brown the chicken in the pan when it is almost brown add the bacon, cook till the bacon is crispy.
remove the chicken and bacon and put to one side
add more oil to the pan and add the leeks to softern
remove the leeks and lightly fry the mushrooms,
as this is slow cooked there is no need to fry the potatoes.

add the leeks, bacon, chicken and potatoes back to the pan and add the stock

cook on a low heat for one hour
season to taste and add the handfull of chopped parsley
add the cream and rewarm through

i serve this on its own

Summary: make on a cold day off
