Tantalizing tortilla BBQ chicken! (Poultry)

Chicken fajitas - one of my favourite meals that my hubby cooks for me, they are delicious and relatively quick to make (from scratch, not from a packet)! We have these probably once a fortnight - yummy!

Ingredients:
Chicken (enough for the number of people you are cooking for)
Tortiall wraps (enough for everyone - depends on how greedy you are)
Red pepper - washed and cut into thin strips
Green Pepper - washed and cut into thin strips
Red onion - we usually use a third - washed and diced into small pieces
Knorr stir it up sauce - BBQ flavour

Extras:
Grated cheese
Lettuce
Cucumber
Yellow pepper, washed and cut into thin strips
tomatoes
(choose a selection from this list - I am sure you could find more to add here)

Cut the chicken into small strips and start to cook, more or less immediately add the stir it up sauce. Cook until chicken is fully cooked through then add the red and green peppers and the onion. Cook for desired amount of time - it depends on how al dante you want the onions and peppers. In the meantime, cook the tortillas as it says on the packet (usually in the microwave for a few minutes). Also prepare your choice of extras. Whilst the meat, peppers and onion are cooking it is advisable to add a small amount of water (I usually use the sauce jar as a measure for this as it also gets a bit more sauce out of the jar). I would add one jar of water to teh mixture, this stops the meat and sauce from burning but also provides extra sauce for in the fajitas themselves.

Once meat is cooked and onion and peppers are cooked to your taste (hard or soft) then place in a serving dish. Use the tortillas to make wraps, usuallu I add a bit of each of the extras and then some of the chicken micture and some of the sauce. This mixture is placed from the top to about two thirds of the way down the tortilla in a small strip. Fold over the bottom of teh tortailla over the mixture and then, in turn fold over each side. Now hold on tight and take a bite - yummy!

This can be quite messy if you haven't folded our tortilla right, so make sure you haven't got your best clothes on!

Preparation is probably about 20-25 minutes, it is the washing up that takes ages - but then doesn't it always?

These are great for when you are having dinner parties though a little messy for some, and also great for a nice meal with your partner. Kids do enjoy them too, with the added value of 'build your own.'

I love these and think I am going to have to get hubby to cook them sometime soon!
