This is a review on a quick and easy meal that I tend to make quite often with all the bits of leftover Sunday dinner....its what my hubby calls my chicken pot luck pie!!! I would prefer is to be called something a little more nicer and something that sounded a bit more appetising, but chicken pot luck pie has sort of stuck with us as a family, so I hope my recipe for my chicken pot luck pie comes in use to some of you.

I find this an easy meal to knock up on a Monday morning ready for Mondays evening's meal, the kids tend to really like it as well and it's a good cost saving meal in this current financial climate.


Any way here it goes......

Ingredients

3-4 cooked chicken breasts, or about approx 300g of roast
chicken especially if you have any left over's from Sunday dinner )

150g mushrooms ( sliced up)

175g carrots (sliced up)

1 medium onion (chopped)

500ml white sauce

pinch dried tarragon

salt and pepper

500g mash potato

Couple of pinches of nutmeg in the mash


Directions

* Preheat the oven to 375 F/190 c or gas mark 5

* Put carrots in saucepan and simmer for approx 6-8 mins

* Drain carrots and set aside (or another tip is to just keep some over from Sunday dinner )

* Cook your chopped onion in a little oil gently

* Remove from pan and set aside

* Brown your sliced mushrooms and again remove and set aside

* Chop your cooked meat into smaller pieces, or if you are using leftovers from Sunday dinner, then just put the leftover parts of the chicken aside.

* In a large saucepan mix in the white sauce, empty the chopped cooked onion, and browned mushrooms, along with the carrots and chicken.

* Put in a pinch of tarragon and salt and pepper to taste, and then simmer on a low heat for 15-20 minutes.

* Transfer to pie/lasagne dish and top it with your mash potato. (when mashing your potato I always add a little nutmeg)

* Bake in oven for 30 minutes until golden.

* Serve with Vegetables of your choice, although we always tend to have it with broccoli.

This is really yummy; I hope some of you may be able to make use of this recipe.
