Easy- peasy puff pastry chicken pie (Poultry)

A chicken puff pie for ..........cheats!

After Sundays lunch I often get left over chicken in the fridge come Monday morning , so here is a simple yet very impressive chicken pie which will not fail to have the family asking for more.

Ingredents:
Left over cooked chicken pieces ( 8-10 oz) if you dont have enough I just pop a chicken breast in the oven for 25 mins whilst I'm cook something else to add to Sundays left over chicken.
A tin of campbells condensed mushroom soup.
Chopped fresh parsley. salt & pepper.
A packet of ready made puff pastry.
Egg & milk glaze for the top pf the pie.

How to make :

1: Cut the ready made pastry into two and then roll out one portion to fit your favourite pie dishes and line it.

2: In a large bowl add the chicken which has been cut into bite size pieces and mix with the parsley , salt & pepper .

3: Open the soup and spoon this out into the bowl adding 1/2 a can of either milk or chicken stock ( which ever is easier for you ) carefully mix this all well , dont go to mad or it will look like dogs dinner !

4: spoon this all into the lined pie dish , then add the lid of pastry , which you have cut before hand and left a good 3/4 inch over hanging .
Wet the pastry edges and seal to the base of your pie , then with a sharp knife cut off any excess , if your clever you can now using three fingers make a wonderful flute around your pies edge , dont forget to make a hole in the centre to let out any steam ( small one the size of a 5p piece )

5: Brush the top of the pie with the milk glaze .

6: place your pie in a preheated over at gas 6 or around 200 for about 25 mins or until its golden brown on the top .

This pie is one of my family's Monday dinner favourites and has never failed to please. BUT I also make it with fresh chicken breasts for a speacil dinner, adding to it small button mushrooms and white wine instead of the milk or the stock .
If decorated with leaves and flowers made of pastry and served with sauteed potatoes and , honey glazed carrots and broccoli florets it does look good on the plate and I've never had a scape left on a plate for the bin ............scrummy .

COOKS TIP:

I always keep blocks of ready made puff pastry in the freezer and cans of campbells condensed soup in Chicken , tomato and mushroom in the larder, these added to left over meats, chicken or even sausages can make a quick and easy meal for the family in minutes.

Summary: A good , quick pie that never fails to please the family
