This may sound like a bizarre combination for a dinner, but the tastes blend very well together, and if your like me, you'll probably find it is one of the those dinners that you can make using everyday store cupboard items, rather than having to pick up some unheard of ingredients.

This recipe is for a Chicken and Peach Bake, and only takes 30 minutes in the oven. A quick weeknight dinner.

These quantities are for 4 people

Ingredients

4 chicken breasts
1 tin sliced peaches (drained)
1 tin Campbell's condensed Cream of Chicken Soup (I think Campbell's soups are under a new name)
1/2 small jar of light mayonnaise
1 tsp curry powder
2-3 leeks chopped
50g breadcrumbs (I usually buy the ready made breadcrumbs)
1 packet cheese and onion crisps
5 tbsp semi skimmed milk (optional - but makes it creamier)

Pre heat over to 180C/Gas 5
1. Cut up chicken into little chunks and fry until browning.
2. Add leeks to the pan and cook until leeks are soft and tender.
3. In a separate bowl, mix the soup, mayonnaise, milk, and curry powder.
4. In an ovenproof dish, layer the chicken, leeks and drained peaches then pour over the mixture.
5. Sprinkle the breadcrumbs and crisps over the top of the mixture.
6. Bake in the oven for 30 minutes until golden brown.

I usually serve this with a salad, garlic bread or some green veg.

One of my many trusty weeknight tea recipes that I make time and time again.

Not sure about this but a very interesting idea! Mind you I used to think cheese with grapes was odd but I like it now.
