Advantages: extremely tasty!

As you may be aware, I am a vegetarian, so it may seem odd me posting a recipe in this section. However, my boyfriend and parents are not vegetarian, so I often find myself cooking this particular dish for them.

You will need:
1 large chicken breast per person
1 large ball buffalo mozarella
2 pieces of pancetta per person
tomato puree
chilli powder
olive oil
chilli flakes
red onion
cherry tomatoes

Before you intend to cook you need to take a large mixing bowl and inside it place your tube of tomato puree, along with two table spoons of chilli powder and one of chilli flakes. Add one table spoon of olive oil to this and give it a good mix. Now place your chicken breasts inside the mix and give them a good coating. Then you need to leave this to marinate for at least an hour or two, but if you can leave it longer it will taste better as the flavour will have had time to infuse itself into the chicken.

While this is going on you can fry your cherry tomatoes with the finely chopped red onion, which you will then need to leave to cool so that you can handle them.

Once the chicken has marinated enough, slice lengthways down the breast and stuff the breast with the mozzarella and the tomato/onion mix. Don't over stuff it but make sure there is plenty of filling. Now wrap the two pieces on pancetta around the meat and put a skewer or cocktail stick through the food to keep it together while cooking. You might want to cook this in foil to retain the juices as a topping.

Cook for approximately 20 minutes at 180c fan. Serve with salad and a potato product, spicy wedges goes down well here! Enjoy :)

Summary: a nice meal for a dinner party or a sunday treat.
