Advantages: Makes bland chicken breast delicious.
Disadvantages: You only get one each.
Chilli cheese chicken is a great dish for a special occasion without breaking the bank. Chicken breasts can be bland and this combination of cheese and chilli really lifts the flavour.
You will need. (to feed four)
4 large chicken breasts.
120g crumbled mild blue cheese.
Sweet chilli sauce.
4 cocktail sticks.
Take a sharp knife and make a 'pocket' in each of the chicken breasts. You need to use a sharp knife because otherwise you will make the chicken flesh ragged and the pocket will not work properly.
Make as large a pocket as you can without damaging yourself. (Even though you are cooking for your nearest and dearest, a blood sacrifice is not necessary!)
Mix enough of the chilli sauce into the cheese to make a stiff paste. It will look a very strange colour.
Divide the mixture evenly stuffing the four pockets in the chicken breasts.
Use the cocktail sticks to close the pockets.
Line an over dish with foil leaving enough over the edges to make a parcel over the chicken pieces.
Put the chicken onto the foil and spread a little more chilli sauce on the top surface of them.
Loosely join the foil edges so a fairly good seal is made but with some room above the chicken. There is no need to oil the foil unless you want to.
Bake for 40 minutes at 200c.
When you are ready to serve them be careful unwrapping the foil because steam will have built up in the packet.
Put the chicken pieces on a dish and sprinkle a little more chees on so that it starts to melt. Don't put too much on or you will overpower the rest of the dish. Take the cocktail sticks out!
Serve with new potatoes or roasties! A green veg' goes well with it or a crispy green salad.
The chicken will be moist and very tasty. The sweet chilli sauce makes a good contrast with the cheese. You can substitute milder cheese if you want a less pungent flavour.
