Advantages: Quick and easy to make
Disadvantages: Quite spicy so if you're not a fan of hot food don't try this
After trying some of the Fajita kits that are currently in the shops I was disappointed as they just never seemed to taste great so I had a go at a recipe that a friend gave me.
Serves two
All you need is the following:
1 large onion
1 Red Pepper
1 Green Pepper
3 Reasonable sized Chicken Breasts
Knorr Stir It Up Mexican Fajita Sauce
1 Pack Discovery Flour Tortillas (8 in a pack)
Discovery Soured Cream
Salsa dip (either hot or cool its up to you) - I tend to use the Tesco Salsa Dips
How To Make:
Slice the chicken into strips (roughly 8cm long & 1cm wide), put in a large sauce pan and start to cook, whilst the chicken is cooking chop the onion and add to the chicken then slice the peppers into strips (not to thin) and also add to the pan.
Next add in the Mexican Fajita mix, give it all a good stir so everything get coated with the sauce, cover and simmer for around 15mins (or until everything is cooked), make sure you give it a stir occasionally to prevent it all sticking to the pan.
When the chicken is ready place the Discovery Flour Tortillas in the microwave for about 20 seconds, then pour the chicken mix into a large dish and serve. You should now have a dish of Chicken Fajita Mix and a plate of warm Tortillas.
When I'm making a wrap I tend to put a reasonable amount in the middle of a Tortilla (you don't want to much or it will all burst out and be a big mess), I then add a bit of salsa (don't add to much if you don't like them hot) and then on top I add sour cream, wrap it all up and enjoy.
This is a very nice and simple recipe which does not take very long to make, the wraps are quite hot though so if you are not a fan of spicy food then probably best not to try this recipe.
To make this for more people just use a couple more chicken breasts, another onion and two more peppers.
