Advantages: Delicious
Disadvantages: Not suitable for people with nut allergies
I love trying new recipes, and when I saw this one a month ago, I had to try it, and it went so well it has been a regular dish in our house since. I must warm you that it is not suitable for people with nut allergies, as it contains cashew nuts. STIR FRIED CHICKEN WITH COCONUT RICE It is a relatively cheap dish to make, as I can get all of the ingredients at my local Asda for under £6, and there is enough to serve 3-4 people, depending on the size of their appetites. Leave about 90 mins in total to make this dish, as there is some marinating involved. *INGREDIENTS* 1lb/450g chicken breast, sliced 2tbsp olive oil 2tbsp soy sauce 1 tbsp sherry (optional, I do not use it) 2 chopped green chillies 1 tsp Chinese five spice 1 red pepper, deseeded then sliced 1/4 cucumber cut into thin long slices 4oz/100g mushrooms 2oz/50g cashew nuts salt and pepper to taste To make the rice: 1oz/25g creamed coconut 2 cloves 1 cinnamon stick 1 piece lemon grass 1 bay leaf 12oz/350g basmati rice To start off, marinate the chicken in a mixture of the oil, soy sauce, sherry, chillies and chinese five spice for at least 30 minutes. The longer you can leave it the better the taste will be. While it is marinating, you can prepare the rice. Put all of the ingredients for the rice in pan, omitting only the rice itself. Cover the ingredients with 1pt/600ml of water and some salt, and SLOWLY bring it to the boil. When it is boiling, stir in the rice with a fork, then cover and simmer for approximately 15 minutes or until all the liquid has been absorbed. Leave for 2 minutes, and season as required. While the rice is cooking, heat a wok and add the marinated chicken, where it should be stir fried for around 3 minutes until it starts to change colour. Add the remaining ingredients, and cook for approximately 5 minutes until the vegetable
s start to soften. Serve with the stir fry on top of the rice. This is even more delicious if accompanied by a bottle of good white wine. Enjoy.
