Crab Fried Rice (Rice & Pasta Dishes)

Not your typical rice dish this but one that is lovely as a treat and it goes well with other seafood as well or as a meal on its own.

Ingredients

150g long grain rice
2 tbsp of peanut oil
125g canned white crab which has been drained.
1 leek which has been washed and sliced
150g cut bean sprouts
2 eggs that have been beaten
1 tbsp of light soy sauce
2 tsp of lime juice
1 tsp sesame oil
salt


First cook the rice in a saucepan of boiling salted water for about 15 minutes. Dain the water before rinsing under a cold tap and draining again thoroughly, this helps to remove any of the starch around the rice.

Heat the nut oil in a wok until it is really hot and then add the crabmeat, leeks and bean sprouts. Stir fry this for about two minutes. Remove the moxture and set aside until required.

Add the eggs to the wok and cook ensuring that you stir the eggs continuously for bout 2-3 minutes until they have set.

Then stir the crabmeat, leeks, bean sprouts and rice into the wok with the set eggs. Add the soy sauce and lime juice to the mixture and cook for about a further minute ensuring that the ingredients fully mix in together.

Prior to serving sprinkle with the sesame oil and serve immediately as the dish does cool down quite quickly.

I love this dish as it is light and simple and makes a nice change from the usual stir fry recipes.

tasty soundinmg maybe when i next go to tyhe east coast UI will buy some grab to do this with.
