Advantages: Fresh ingredients mean no additives or other nasties.
Disadvantages: A bit fattening.
This recipe is a lovely rich tasting dish that is a nice alternative to the jared pasta sauces that seem to have become commonplace in the modern household. If youve got a little time its a good idea to cook things like sauces from scratch as most branded sauces are full of additives and E numbers.
This dish isnt really for those on a diet as the cream cheese is fatty and really a bit extravigant! Though the goodness from the peppers, onions and tomatoes will sort of counter balance that. Pasta meals can work out very economical as you can store them in the fridge and heat them up the next day, i often take my left overs to work the next day and it makes a filling and enjoyable lunch hot or cold.

Serves: 2-3
Ingredients:
200g Pasta
15 Cherry Tomatoes
1 Yellow Pepper
4 spring onions
150ml Creme Freche
4 Tbs Cream cheese (preferably Bourson or something similar with herbs)
3 Tbs Olive Oil
Juice of half a Lemon
Salt and Pepper
Method:
Put the oven on at 200c.
Half the cherry tomatoes, deseed and slice the pepper and chop up the sping onions.
Place both peppers and tomatoes in a small oven-proof dish, drizzle with 2 Tbs of the Olive oil and season well and place in the oven for 20 minites.
Cook the pasta according to the packets instructions.
Melt the cream cheese in a saucepan over a low heat and stir in the creme freche, add the lemon juice, half of the spring onions and salt and pepper. keep stiring on a very low heat for 3 minutes.
Take peppers and tomatoes out of the oven and stir into the sauce (dont throw away the juices, pour it all into the sauce mixture)
Drain the pasta and drizzle with remaining olive oil before stiring in the sauce.
Sprinkle with the remaining spring onions and serve.
