Easy Chicken Biryani
Chicken Biryani is a classic Indian dish, it can be served as a main course dish on a special occassion or just as a regular dish anytime. Many people think that it takes ages to make biryani so they don't choose to try it out but this recipie is very easy and quick. Plus it tastes great with minimum effort. I make this dish fortnightly and it is a hit with everyone.
Preperation time: 15 mins
Marinating time: 2 hours
Cooking time:25 mins
Serves 4
Ingredients :
4 chicken thighs with skin on (alternatively you can use any piece you want, boneless, legs etc
200g natural yoghurt
1 large onion
4 tbsp vegetable oil
2 tbsp curry powder
4cm ginger root
2 cloves garlic
2 green chillies
500ml chicken stock
50g raisins
½ cup basmati rice per person
Recipe :
Chop up chicken and coat in yoghurt. Leave for at least 2 hours to marinate.
Heat 2tbsp oil in a pan and fry onions, chopped garlic, chopped chillies and grated ginger until golden.
Add coriander, raisins, rice and stock, cover and simmer for around 12 minutes.
Separate chicken from yoghurt, throw away yoghurt and fry chicken in 2tbsp oil for a few minutes. Add to rice and cook for another 5 minutes or until chicken is cooked through and the mixture is piping hot. Alternatively if you put the dish, covered with foil, into the oven for around 20 mins it enhances the taste even more.
Serve with raita, salad, plain yogurt or popadums.
