Chicken and vegetable Stir-fry with Noodles. I'm putting this in this section because apparently noodles count as a type of pasta. Now this is a really simple dish that I learnt to make in food tech at school and have adapted over the years. A stir-fry is one of the easiest foods to make although not one of the healthiest as fried food shouldn't be eaten to often. Anyway this is a nice simple recipe for the summer months when none of us really want to be spending hours in the kitchen cooking. This recipe will serve four people and this is how you make it:

You'll need:
2 large skinless chicken breast fillets
1 tbsp olive oil
1 clove garlic, peeled and crushed
225 g broccoli
2 large carrots
1 courgette, sliced and chopped into thirds
1 bunch of spring onions, trimmed
250 g medium egg noodles
2 tbsp soy sauce
Freshly ground black pepper


What to do:
Chop the chicken into thin strips and then cut them in half width wise so that they are half as long as they were before.
Put the chicken, garlic and olive oil into a bowl together and mix them so that they can all soak together.
Boil the broccoli in salted water for about 5 minutes or until it has started to get soft.
Cut up the carrots, spring onions and courgettes.
Put the chicken, garlic & olive oil into a wok and stir fry them for about 2 minutes, or until the chicken is a light brown on either side. To do this you will need to keep flipping it over.
Once the chicken is cooked add vegetables.
Fry them for about 5 minutes then add the soy sauce.
Continue to mix them around the pan so that they don't stick and burn.
Cook your noodles, there will be instructions on the packet as to how to do this that will probably be better than mine. It should take about 5 minutes to do.
When the noodles are cooked and drained add them to the wok and mix them all together.
Serve immediately.
