Advantages: Quick to make, tasty, can be served as a side dish or a main course
Disadvantages: None that I can think of
Rice (risotto) with rucola
Ingredients:
-rice (depends on what you if you are using this as a main course or as a side dish-use rice for risotto)
-rucola (or dandelion if you are in season, it tastes better by my opinion)
-Parmesan
-cooking cream
-1/2 l of vegetable or chicken soup basis (home made is the best but
a soup concentrate will do a fine job)
-half of a small onion
-olive oil
-salt
-pepper
-mixed seasoning
-butter
This is one of my favorite risottos and I usually serve it with veal cutlet
(since my beloved can not imagine a meal without meat).
Preparation:
1. wash the rice
2. chop the onion
3. wash and chop the rucola
4. Prepare the soup (it must be warm)
Recipe:
1. Heat up the oil in the pot and add chopped onion (+a bit of salt). Roast it for a little while, till the onion turns clear yellow.
2. Add the rice and roast it, while shuffling quickly for a few seconds (10) then add a ladleful of soup (or two) so the rice is fully soaked in the soup. Shuffle it a few times. When the soup is running low, add another ladleful and continue doing so until all the soup is used (afterwards use hot watter).
3. Check on how long the rice must be cooked (on the box, since every rice box has its own time) and after that period start with seasoning. Try the rice, to see if it is cooked enough (since people have different tastes on how hard the rice must be) and if you are not satisfied yet, add more watter and cook a bit longer until you are satisfied.
4. When you are satisfied do not turn off the fire! Add rucola to the rice and shuffle it. (add as much rucula as you like, I use a whole lot so that every bite I make has some rucola in it). Also add a teaspoon or two of Parmesan. Mix, mix, mix (30 sec) and turn off the fire. Add cooking cream (again depends on taste) and mix it.
5. In the end drop 2-3 spoons of butter on top of the risotto and cover the pot and leave it like that for 3 minutes then serve it.
6. That's it! Buon appetite!
