a really tasty vegetable curry (Rice & Pasta Dishes)

This is a recipe for mild egg and vegetable curry with rice, I ike to make this at the weekends as it doesn't take to long, It's a really tasty dish.

Ingredients needed:

Brown or white rice amount depends on how many you are cooking for i usually cook about 100g per person.
1 large onion
1 eating apple, peeled and finely chopped
1 clove of garlic, crushed and finely chopped
150 ml of water or vegetable stock
half can of coconut milk
200g green beans, cut up and sliced in to halves
16 small cauliflower florets
3 tomatoes cut into wedges
150g of frozen peas
2 table spoon of sultanas
4 eggs
2 tea spoons of mild curry powder

Cook the rice on a low heat while you make a start with your curry to ensure they will both be ready together.

1) Lightly oil a large non stick saucepan
2) Gently fry the chopped onions, apple and garlic for 5 minutes until they have all softened
3) Add the curry powder and cook for another minute
4) Add the water or vegetable stock, coconut milk, green beans and cauliflower then place lid on and simmer for 8-10 minutes until the beans and cauliflower are cooked, add a little more water if needed.
5) Add the tomato wedges, the frozen peas and the sultanas and cook for another 3 minutes.
6) Meanwhile place the eggs in a saucepan of water and boil for ten minutes, once cooked remove from heat and put under cold water immediatly.
7) Remove eggs from there shells, then cut them in half lengthways. Lay the eggs cut side down in the bottom of a shallow dish.
8) When the curry sauce is ready pour it over the eggs and serve with the rice.

If serving for guests then it looks more attractive with salad also.

I sometimes cheat and buy the ready made rice just for quickness.

This is such a quick and easy curry to do and you dont have too much washing up at the end of it....thats always a bonus.

Summary: good saturday night meal
