Easy Peasy Pesto (Rice & Pasta Dishes)

This is a really easy way to make a great pesto sauce, it works out really cheap too if you have the ingredients lying around in the house. Its great for somebody like me who doesnt do an awful lot of cooking as there isnt actually any cooking involved!

The recipe will serve two, so use ingredients accordingly.

60g Fresh Basil
4 Tablespoons of Olive oil
2 Tablespoons of Pine nuts
A clove of garlic, chopped
30g of Grated Parmesan cheese
1 Tablespoon Romano cheese
20g Softened butter
Salt and Pepper

Process:
1) Was the basil in cold water and leave to dry
2) Put the basil, olive oil, pine nuts and garlic into a food processor and blend until creamy, add salt and pepper to taste
3) Mix in the parmasen and romano cheese. Once mixed in add the butter and stir this in.

Thats it! simple. I then served it with some pasta by cooking the pasta, draining it off and then tossing in the pesto. I then grated some parmasen on top and scattered some pine nuts, and it tasted really nice!

You can make the sauce whilst the pasta is cooking and the dish overall will take about 10-15mins from start to finish and is an incredibly cheap dish to make.
