QUICK CHEATS KEDGEREE

Kedgeree is originally a rice, lentil and onion dish from India.
The Brits added fish and eggs to make this brunch dish we love and know today.

To serve four you will need

4 eggs
2 x250g microwave pilau rice (Delia would be so proud)
6oz smoked haddock fillet
salt and black pepper


To prepare

Grill the haddock on a baking sheet for about 10 minutes until cooked through.

In the meantime boil the eggs for 6-7 minutes. Drain and place under cold running water until cool enough to handle.

Whilst the haddock and the eggs are cooking, cook the rice as per the packets instructions. (Good old Uncle Bens!)

Shell the eggs and cut into quaters.

Flake the fish and gently mix into the rice.

Spoon onto your serving plates and add the quatered eggs (I use 1 egg per person)

Grind black pepper over to taste.

Garnish perhaps with fresh coriander leaves for colour and indeed for the flavour (optional)

If you have the time or are trying to impress, press the rice into a ring mold and arrange the eggs around.
