Serves 4 Adults - very generously - no starter or pudding! - or 6 adults as a meal
Ingredients
2 x Courgettes - chopped into bite size pieces
2 x Leeks - sliced
2 x Handfuls of frozen peas
1 x Packet Bacon Lardons
200 ml Chicken Stock
Small tub of Creme Fraiche (Light if you want to be healthier)
1 x Tub Philidelphia (Light if you want to be healthier)
Dash of White Wine Vinegar
Seasoning
Pasta - enough for how many you are serving
Recipe
Firstly get the pasta on to cook - whilst this is boiling away fry the bacon lardons in a large saute pan until lovely and golden.
Add the cooked pasta to the saute pan with the bacon and all of the lovely juices and give it a good mix up.
Remove all of this from the pan and put in a dish to one side and keep warm.
Put the chicken stock into the saute pan - bring to the boil.
Add the peas, courgette and leeks - cook until almost done. The stock should have in the mean time reduced down, you will only want a small amount of it left - so if there is more than this remove the excess from the pan.
Now add the dash of white wine vinegar, the creme fraiche and philidelphia and mix together.
Wait for this to start bubbling then add the pasta and bacon mix to it. Thoroughly mix this together and season to taste.
Serve with some lovely garlic bread on the side.
Summary: Simple week night dinner that is very tasty - also good for when you have guests during the week!

- 01/07/09 I made something similar to this the other day and I used Tesco Value Soft Cheese, it worked really well and it's only 45p compared to Philadelphia at £1.33! |
