Advantages: Quick, Very easy, And quite sexy
Disadvantages: Quite calorific
Pasta with Smoked Salmon in Lemon Sauce (with a vegetarian alternative) This is very easy and quick to make but quite impressive and sexy. Serves 3-4 Preparation & cooking time: 20-25 minutes Ingredients: 300g fresh/dry tagliatelle (green/white or both) or any other kind of pasta* 12 fl oz of double cream 150-200g smoked salmon or 4-6 large asparagus if you are making the veggie option 1 lemon (finely grated skin and juiced) Dry white wine Black pepper Tin foil A grill At least one hot ring *Note: if you are using fresh pasta (3-4 minutes cooking time) then make the sauce first. If you are using dry pasta (10-15 minutes cooking time) make the sauce while cooking the pasta. Pasta Place the pasta in a large pan of boiling water and stir. See cooking times above. Stir very occasionally. Sauce Salmon Option Put your grill on a medium heat and cover the grill pan with tin foil. Place the slices of smoked salmon on the tin foil and grill for 1 to 2 minutes or until the salmon has turned pale pink but is still moist. Turn the grill off. Asparagus Option Cut the asparagus into inch sized pieces. Steam (or boil) the asparagus for 4 to 5 minutes. Finely grate the skin of the whole of the lemon. Halve the lemon and squeeze the lemon juice. Put all the double cream into a pan and gently heat until it is warm but not too hot (don't let the cream boil!) Keeping the cream on a gentle heat add the lemon juice and stir constantly - when you add the lemon juice the cream will thicken - stir to make sure it stays smooth and creamy. Add 1/4 of a glass of dry white wine - again stir constantly because the sauce will thicken. Add a very small amount of black pepper and stir in. Add all the grated lemon and stir in. Break the salmon slices into medium sized flakes a
nd add directly to the lemon sauce - stir in the salmon pieces. Or Add the steamed/boiled asparagus to the lemon sauce and stir in. Keep the sauce on a gentle heat while you drain the pasta but don't let it boil. Place the drained pasta in a large serving bowl. Pour the sauce onto the pasta and toss the pasta making sure that all the pasta is coated by the sauce. Serve, enjoy and drink the rest of the wine. I think this recipe is sublime and I made it up myself - honest!
