We all know by now that Beetroot is very good for us.
It has recently been featured in many programmes on tv and articles in newspapers
Supermarkets picked up on trend and stock it on permanent basis now.
Beetroot's main benefits are that it contains no fat, very few calories and is a great source of fibre.
But what do you do with that?
There are lots of different recipes, but I thought I'd share with you one which dead simple to make, takes no more then 10 min to prepare and is perfect as a salad, side dish or a starter.
I have used it for years and it's always has been welcomed at dinner party.
Well, here is all you need:
pack or 2 of cooked beetroot depending on how many people you are cooking for. (just cooked beetroot, but not the one in vinegar)
2 medium cloves of garlic(great for your immune system) per 250 gr pack of beetroot
about 2 spoon full of mayonese (light will do, but I personally find untasty)
salt
That's it!!!
and watch your clock :-)
1. Grate your beetroot using usual size grader( not the fine). Food proccessor also is fine.
Avoid using wooden surfaces or spoons as beetroot stains difficult to wash out.
2. Crash your garlic or chop it extremely fine and ad it to the beetroot.
3. Stir in mayonese, not too much but not too little but basically to your taste.
4. Add some salt.
That's it!
I'd normally keep it in the fridge for an hour or so for tastes to blend, but it's also posible to serve it straightaway.
Any leftovers will remain fine for at least 2 days in the fridge.
