Advantages: very healthy, tastes great, does not take long to prepare
Disadvantages: you could feel lazy to prepare the salad.
In my childhood I never grew up liking salads though my nanny and mum used to force me. Of course they could have been said to be healthy, but it is the taste that put me off indeed. But in life we all move on and I have now learned to like my salads. Every time I eat dinner I always make I get extra greens in my plate.
In my house we mainly make different types of salads but I am going to share the salad we prepare a lot of the times. And we just call it chicken salad. We mainly cook it when we have leftover chicken from last dinner or we don't have enough chicken pieces to share one each. So it could be a way to get rid of your left over chicken or just a way to share your chicken evenly.
This salad is very easy to prepare and does not take much of your time. I however, always avoid preparing it because whenever I prepare it I never enjoy the salad to the core.
______Ingredients______
4 Spring Onions Chopped
2 radishes, sliced
350g cooked chicken
Leaves of radicchio, lollo rosso and crisp curly green lettuce
50g walnuts, chopped
3 sticks celery chopped
1 red or green eating apple, chopped.
____For The Dressing____
2 teaspoons apple juice
2teaspoons lemon juice
125ml reduced calorie mayonnaise
60ml crème fraiche
__________Equipment________
2 bowls, a plate, a very sharp knife, a tablespoon and a cutting board.
_________Preparation_________
1. Wash your hands first before you even think about touching anything (who knows were you've been scratching?).
However, For the dressing, take a bowl and mix the mayonnaise, crème fraiche, apple and lemon juices at the same time. You have to keep mixing until it looks nice to the eyes. Put the mixture into the fridge to keep it cool.
2. Cut the chicken into small bite-size pieces with a very sharp knife so that it won't go all messy. Mix the celery, onions, apple and walnuts in to a bowl. Pour over the dressing you just made into the bowl and mix smoothly until it is evenly coated. After a while add the chicken into the same bowl with the mixture mix a little bit and Put the mixture into the fridge. Chop the radish in slightly thin slices and put in a plate.
3. Wash the lettuce leaves and dry them as much as you can, until no water is dripping. If there is water dripping it will change the taste of the salad as a whole. Tear the lettuce leaves into large pieces. Arrange them neatly in a large serving bowl or possibly in the individual serving plates. Spoon the chicken mixture on top of the lettuce. Once done Decorate the salad with slices of radish and serve immediately.

I really do love the taste of the salad, It tastes so delicious. When I chew the chicken and the radish together my mouth goes cool and feels like I am in heaven. I surely don't want to be disturbed when eating this salad. The mild taste that comes from the dressing surely leaves you pleading for the next spoonful of the salad. I don't know how I can explain the taste of the salad in depth. The salad does smell very fresh and the onions do add this strong smell (it won't put you off trust me) that makes it look and taste delectable.
I normal eat the salad with pizza, pasta or freshly baked bread depending on my mood really. However, you could save it with anything you wish really. You just have to go out there and explore, the foods you prefer with the salad.

--- This salad serves about four people, therefore if you have a huge family you can always
double the ingredients to make it serve eight people.
---The chicken salad has about 372 calories. However if you want to reduce the
calories you can always buy 'reduced-fat crème fraiche'
---Most of the ingredients mentioned you can buy them from major supermakets.
If you can't find them on the shelf just ask.
--- It won't take you more than 25 minutes to prepare the salad.
--- If you don't like mayonnaise you can always use salad crème.
Summary: a healthy salad that tastes great.
