Waldorf Salad and Pasta Salad (Salads)

I know it's still winter, but it won't be long before it's summer again and it will be time to wheel out some salad recipes. These two are my favourites....

Waldorf Salad
==========

100g walnuts, chopped roughly
1 head celery, chopped
1 red apple, chopped
1 green apple, chopped
100g green grapes, halved
100g red grapes, halved
2 tsbp mayonnaise mixed with 1 tbsp milk

Throw the walnuts, grapes, apples and celery into a large bowl and mix with your hands to combine. Mix the mayo with the milk (the milk makes it runnier, easier to mix in with the other ingredients and makes it less sticky) and pour over the other ingredients. Mix well with a spoon and chill before serving.

Pasta Salad
=========

340g pasta shapes, cooked and drained
2-3 red onions, peeled and cut into wedges
3 courgettes, cut half lengthways
1 large aubergine, cut into thick slices
1 red and 1 yellow pepper, de-seeded and cut into quarters
olive oil
sea salt and cracked black pepper

To serve:
extra virgin olive oil, chilli oil and balsamic vinegar or pesto
parmesan or mozzarella
torn basil leaves

Preheat the grill to a medium heat. Toss the vegetables in olive oil and season with salt and pepper. Grill the peppers first. Cook skin side down until the skin becomes charred. Remove, peel off the skin, cut into strips and set aside. Grill the remaining vegetables until soft and crisping at the edges. Remove and cut the aubergine and courgettes into chunks. Stir the vegetables through the cooked pasta. Pour over extra virgin olive oil, chilli oil, balsamic vinegar or pesto. Serve topped with parmesan or mozzarella and torn basil.

i love pasta salad, the waldorf sounds rather weird,, a mixture of grapes and walnuts sounds rather weird..
