It is great time for salads (Salads)

When the weather is so hot (this is still summer), many times I do not feel hungry but I fancy something cold and refreshing: my friends salads.

I have 2 fav, that I want to share with all of you:

Spanish-Russian Salad

I ate huge bowls of this. It is good with or without the mayo but the former is better for a sandwich filling.

Ing:

Boiled eggs and potatoes.
Peas and sweetcorn.
Lettuce and spring onions.
Tuna in oil.
Crab meat, prawns (if you feel splashing)
Cheese (grated and diced)
Red pepper.
Olive oil, vinegar, lemon juice.
Salt and pepper.
Mayo (optional)
Oregan.

Prep:

Dice potatoes and pepper, slice eggs. Wash lettuce, cut onions. Smooth crab meat and tuna with a fork.
Put everything in a bowl (except dressings and grated cheese). Add mayo if used.
Mix dressing separately and add to the bowl. Sprinkle with cheese and oregan.



Apple-Chicken salad

I found it a perfect way to use left-overs
(I re-use everything in my kitchen)The sauce makes the chicken juicy.

Ing:
####

Boiled chicken. Bacon
Apple.
Lettuce. Spring onions.
Avocado.
Grated cheese.
Lemon juice. Olive oil. Salt and pepper.
Pink sauce (mayo+tomato sauce)
Prep:
####

Wash and cut lettuce, slice spring onions.
Dice chicken or cut in small portions. Add crispy bacon if desired.
Cut the apples as if they were oranges. Cover with the lemon juice, oil. Salt and pepper at will.

Mix the pink sauce (I do my own mayo and add tomato sauce till it is very sweet).
Cover all the salad with the sauce (specially the chicken).
Top with slices of avocado dosed in lemon juice and sprinkle with the cheese.
