Advantages: few ingredients to keep the cost down, little washing up
Disadvantages: might be a little spicy for some
You only need to look up sausage on wikipedia to understand the breadth of sausage popularity in the world today. Understandably so, as sausage making is one of the oldest traditional ways to preserve meat that otherwise has no use following the butchering process.
Sausage is found all over the world and local varieties are as diverse as its people, sometimes sausage is as distinct to an area as its landscape, and is wrapped up in local identity.
Aside from traditional sausage and mash, or toad in the hole or even the great British fry-up, there are literally hundreds of ways to enjoy sausage as a hearty and fairly cost effective dinner. One such dish is made with no more than 6 ingredients and makes a beautifully spicy and filling meal for the whole family.
Golden Mustard Sausage
6-8 good quality sausages (I have found that Sainsbury Toulouse sausage work well)
1 medium tub of crème fraiche
1 pint of pork or chicken stock (from a cube is fine)
1 bunch of spring onions, sliced finely
1 tbsp of wholegrain mustard
Heat a little oil in a wok or high sided non-stick frying pan
Remove the sausages from their casing and make 6 meatballs from each sausage
Fry off the sausage balls in the oil until they are browned, remove from the pan and drain
In the same pan, add the mustard and stock, stir and bring to a fast boil
Boil the liquid for 3-4 min until it has begun to reduce, then add the crème fraiche
When this mixture has reduced by about a third add the sausages back into the pan.
After 4 or 5 min the sauce should be of a good consistency to coat the back of a wooden spoon. At this point add the spring onions and cook for 2 more minutes.
Serve over spaghetti, linguine or rice with garlic bread or a crusty French loaf.
Summary: This is a quick, midweek meal, which makes something a little different from the popular sausage!
